Typical of the 2007 vintage, this cabernet will drink very well in its youth, but will age gracefully for the next 10 years and beyond.
Our Napa Cabernet received choice lots from our Estate Vineyard located in the hills high above St. Helena, as well as fruit from other top Napa vineyards, including Stagecoach and Broken Rock. The fruit was hand-picked and triple sorted before undergoing extended maceration and a long, cool fermentation for increased flavor, color and aroma. The wine was aged for 19 months in 70% new French oak, including 20% of the wine coming from larger 500 liter (132 gallon) puncheons. The wine only racked twice and was bottled unfined and unfiltered.
The 2007 vintage was one of the best in recent memory. After a normal bud break, the valley experienced mild weather through the growing season with a slightly cooler summer and warm September. This climate resulted in slow, even ripening with a crop just slightly smaller than normal, and the highly desired small berry size. Winemakers across the valley are very excited about the 2007 vintage.
Our 2007 Napa Cabernet is very dark red in color with aromas of currents, black cherry, violets, and cedar along with vanilla and toasty oak. The mouthfeel is generous with fine tannins and a long finish.
We recommend pairing this wine with a seared NY strip steak.
