Skewered Sea Scallops with Jerk Marinade

2 C. Scallions
2 Scotch Bonnet Peppers
2 Tbs. Soy Sauce
2 Tbs. Lime Juice
5 Tsp. Ground All Spice
3 Tsp. Dry Mustard – English style
2 Bay Leaves
2 Garlic Cloves
1 Tbs. Salt
2 Tsp. Sugar
1 ½ Tsp. Dried Thyme
1 Tsp. Cinnamon
16 Sea Scallops
16 Wood skewers (10-12 inches)
Mix all ingredients together in a large bowl, add scallops to marinade. Let scallops marinate for 2 days, covered in the refrigerator before using. Place scallops on the skewer, grill over high flame until medium rare.
